This is the perfect dessert when time is short. All you need is a couple of apples, a sheet of puff pastry from the freezer, and some vanilla bean icecream to serve. Crisp and delicious, it’s a real winner.
Ingredients
- 1 x 24cm sheet Butter Puff Pastry, keep refrigerated. My preferred brand is Careme Pastry
- 2 - 3 Green Star apples, peeled, cored, sliced
- caster sugar
- butter at room temperature
Method
- Preheat oven to 190C. Also heat the baking tray in the oven.
- Trim the edges off the pastry sheet. Cut the pastry in half. (You could cut out a circle if you prefer) Refrigerate while you prepare the apples.
- Slice the apples on a mandolin or food processor.
- Place overlapping slices of apples along the tarts until the pastry is covered.
- Sprinkle generously with caster sugar and dot with plenty of butter.
- Place the pastry onto the pre-heated baking paper-lined oven tray.
- Bake for about 30 - 40 minutes until the sugar caramelises, the apples are golden and the pastry is crisp.
- To give the tart a gorgeous glaze, brush it with some melted and sieved apricot jam.
- For a really quick glaze, just melt a jar of fruit jelly in the microwave.
